Beautifully bound in a colorful wrap, these shu (or ripe) tuochas yield a soft, silken texture with tamarind notes and earthy flavors, finishing on a pleasant minerality reminiscent of river rocks. Be sure to sniff the initial rinse, which smells of peat and leather, the perfect entry point.
