Woolly Mint, Apple Mint or Mentha suaveolens is a round leafed, softly textured plant that yields a sweet, buttery herbaceous liquor. This summer's harvest is organically produced by the founder of MEM tea on his farm in Saco Maine. Its high oil content lends itself to multiple steeps.

Infusion: For an 8 oz serving, steep 2 heaping teaspoons of leaf in 205°F water for 4 minutes.
