This high-quality sencha is similar to gyokuro due to a two-week shading period during its growth. With less light, the plant produces excess chlorophyll, which turns the leaf a deep dark green, resulting in a citron umami liquor and a pleasant minerality.

Infusion: For an 8 oz serving, steep 2 heaping teaspoons of leaf in 175°F water for 1 minute. Enjoy!
