Darjeeling Autumnal Flush: Samabeong Estate

A long-awaited autumnal harvest from the Samabeong Estate in Darjeeling produces a beautiful amber liquor that is surprisingly soft and round. Its fruity flavors of plum and grape outshine a minimal amount of astringency - it then finishes on a note reminiscent of rye flour. A very pleasant cup to keep you warm when there's a chill in the air.
Infusion: For an 8 oz serving, steep 1 heaping teaspoon of leaf in 195°F water for 3 minutes. Enjoy!

Tung Ting Hojicha
OOLONG TEA
Tasting Notes:
vanilla • dried apricot • buckwheat
This rare Taiwanese oolong is a blend of leaf AND twig. It's a crisp, beautifully orange-tinted infusion with an aroma of sweet, roasted stone fruit - slightly mossy. Steeping to a creamy, belly-warming cup that is pleasantly sharp; with flavors of vanilla, apricot, and buckwheat - it's reminiscent of foraging for campfire wood during the early autumn.
Infusion: For an 8 oz serving, steep 1 level teaspoon of leaf in 205°F water for 1-4 minutes. Enjoy!

Matcha: Yugen (Marukyu Koyamaen) - 40 g Tin

Rich and creamy, this ceremonial grade matcha boasts deep vegetal flavors of steamed broccoli and asparagus rounded out with the silken texture of cooked white beans. A complex experience.
We source our matcha from Marukyu Koyamaen, a highly regarded tea grower, procurer, and tea blender whose private tea estate, located in the heart of Uji, Kyoto, has a rich history dating back to 1704. Koyamaen has strict quality control systems in place that target a wide variety of issues that can affect the quality, taste, and characteristics of their tea: Teas are kept fresh using a unique drying system that reduces moisture in the leaf to an incredibly low level which is verified by an infrared optical moisture meter. Since a vibrant color is essential to the matcha experience, a colorimeter is utilized to ensure that the matcha has a naturally vibrant hue. Finally, the particle size of the matcha is strictly controlled which ensures each particle is fine enough to deliver an easy-to-blend, smooth-tasting beverage.
Infusion: Sift 2 to 3 grams of powder into a bowl and whisk with 2 to 4 oz. of 175°F water until frothy. Enjoy!
