8. Why doesn’t my tea taste like it did last time I purchased/last year?

Tea is a crop, and just like any other it is susceptible to the weather in the regions in which it is grown. Growing seasons in China, India, and Japan are highly dependant on rainfall, temperature, and other weather phenomena. Generally, teas vary in taste from year to year, and in attempt to remedy this we taste and cup our teas and review recipes whenever new ingredients arrive and seasons change to ensure for consistency and quality throughout the year.
